Kayanza / Burundi
Steep hills, shared stations, and careful drying.

Kayanza’s coffee landscape connects small hillside plots with washing stations, sorting tables, and the repeated work of drying coffee evenly.
In Kayanza, coffee is grown across steep, densely cultivated hills. A farmer may tend a relatively small stand of trees, then deliver ripe cherry to a nearby washing station. That movement from dispersed plots to a shared processing site is central to how much Burundian coffee is organized.
The route
A hillside crop moving toward a shared station.
- 01 · PlotMany small hillside standsCoffee is grown across steep, densely cultivated hills, often as a relatively small stand of trees beside other crops.
- 02 · DeliveryRipe cherry to the stationGrowers deliver cherry to a nearby washing station. The station is not the farm; it is where separate harvests enter a shared sequence.
- 03 · StationReceived, sorted, batchedDeliveries from many growers can be received, pre-sorted and processed in daily batches, with equipment, water, labour and record keeping.
- 04 · ProcessWashed, or dried in the fruitFor washed coffee the cherry is depulped, mucilage removed and parchment washed. In a natural, the fruit stays on through drying.
- 05 · DryingRaised beds, turned by handCoffee is spread, turned, covered and cleaned of defects until it reaches a stable moisture for storage.
The work
Drying is not a passive wait.
Raised beds and drying tables lift coffee away from the ground and allow air to move around it. They still require active work: controlling layer depth, turning coffee, covering it when conditions change, and removing defects. Sector records show raised-bed drying at individual Kayanza stations, but equipment and routines differ from station to station.

Keep the station, process, and coffee distinct.
- 01Coffee in Burundi is commonly grown on small holdings and delivered to washing stations for primary processing.
- 02Bourbon is common in Burundi, but a specific coffee still needs lot-level variety information.
- 03Raised-bed drying is documented at Kayanza stations; it should not be treated as one universal station design.
